Behind the Flavor: NEW Lemon Meringue Pie Cookie

This flavor is THE ultimate way to enjoy that bright lemon meringue pie flavor in a hand-held cookie. If you love anything lemon, then consider these are a must-try! They’re refreshingly sweet and most people would never guess that they’re also gluten free, vegan, dairy free, and soy free. And that’s just one of the key things that makes this cookie flavor stand out; you won’t find another cookie flavor like this out there that meest such a variety of unique dietary restrictions!
We’re no strangers to crafting and releasing unique seasonal cookie flavors (how could anyone forget about our best-selling Peppermint Hot Choclate Cookie?!), but capturing the flavor for this cookie was no easy task. It took months of recipe tweaks, gathering feedback from friends and family, and, of course, plenty of taste testing. In fact, we ended up testing and tweaking the final cookie recipe about 30 different times before we had our winner.
Creating Our Lemon Meringue Pie Cookie
When we got to working making the dough, we first experimented with using natural lemon juice but the end result ended up tasting like a sugar cookie with just a hint of lemon in it. So we kicked it up a notch and started testing a new recipe using a combination of lemon juice and lemon oil. The cookies tasted great, but they still didn’t capture that bright, juicy, mouthwatering lemon flavor we were looking to achieve. Our final recipe variation combines a trifecta of lemon-infused ingredients: lemon juice, lemon oil, and pure lemon powder.
Fun fact: The next time you’ve got a Lemon Meringue Pie Cookie in your hands, keep an eye out for the “3” above the “Pie.” It was added as a nod to using lemon to it’s third power. 😉🍋
By combining all three lemon sources, we were finally able to create a cookie with the robust lemon-y depth we were looking to achieve. Once the cookie dough is made and the cookies are formed, they’re rolled in sugar (made from evaporated cane juice) which gives you a sweet, cooling effect for a “meringue” inspired finish. Then the cookies are baked, wrapped, and ready to be devoured.

- Freeze ‘em: Freeze your Lemon Meringue Pie Cookies and make your very own ice cream sandwiches. We suggest using a vanilla bean or lemon ice cream but really, you’re only limited by your own imagination here. Those who cater to a vegan diet can opt for frozen coconut milk or another non-dairy option which are readily available in most grocery stores these days.
- Mix ‘em: Adding Lemon Meringue Pie Cookie crumbles to a vanilla milkshake is chef’s kiss! This flavor would also be a great addition to add to a vegan vanilla milkshake, too!
