In November of 2024, we announced the latest addition to the Pacific Northwest Cookie Co. family – Espresso!, our new coffee stand bringing together premium house-roasted coffee and our beloved allergen-friendly treats in one convenient location.

A Natural Evolution

The decision to open Espresso! was serendipitous. What started as an unexpected opportunity – a well-located coffee stand that came up for sale in a prime location – quickly evolved into something more meaningful. We realized this wasn't just about serving coffee; it was a chance to extend our commitment to inclusive, allergen-friendly food and beverages while creating a new community hub for our valued customers. “It provides an excellent way to showcase our bakery’s products while giving locals a spot to pick up their cookie orders and enjoy a great cup of coffee,” shared Callie, Founder of PNW Cookie Co. 

More Than Just Coffee

At Espresso!, we're turning the traditional coffee stand concept on its head. The stand’s design reflects the fun and vibrant spirit of PNW Cookie Co., complete with a colorful mural and iconic signage. Just as our bakery revolutionized cookies with transparent ingredients and allergen-friendly recipes, we're bringing the same philosophy to your daily coffee ritual. Every drink at Espresso! is crafted to be vegan, gluten-free, soy-free, and dairy-free as standard – a first in our area. While we do offer whole milk upon request, our default offerings cater to those with dietary restrictions without compromising on taste. Espresso! is different from other coffee stands in the area — here, dairy is the alternative, not the norm.

Craft and Quality in Every Cup

Behind every perfect pour is Alex, our barista extraordinaire with over nine years of coffee experience and experience as a former certified Starbucks Coffee Master. Espresso! offers all the classics — Americanos, lattes, energizers, teas, and hot chocolate — each crafted with care. But what truly sets our beverages apart is our commitment to quality ingredients:

  • House-roasted coffee beans (both regular and decaf), expertly roasted by our founder, Callie (which are also available to purchase at Espresso!)

  • Organic, vegan syrups from Holy Kakow

  • House-made white chocolate sauce (because we couldn't find one that met our standards!)

  • Premium oat milk as our standard, with whole milk as a requested alternative

You'll find our complete line of classic Pacific Northwest Cookie Co. treats at the stand, but there are also exclusive hidden gem offerings at Espresso! that you won't find anywhere else (not even our website!):

  • Blueberry Cobbler Muffins

  • Chocolate Bomb Muffins

  • Peanut Butter Power Up (our raw energy/protein creation)

Local customers can even pick up their online cookie orders at the stand, saving on shipping costs. Our barista, Alex, is happy to take custom cookie orders for next-day pickup right at the window! 

Seasonal Surprises

Just as our bakery celebrates the seasons with special cookie flavors, Espresso! embraces seasonal creativity with barista-designed specialty drinks. During the holidays, we introduced an orange mocha reminiscent of the iconic chocolate orange we all loved as kids! And there's always something new brewing – just ask Alex to surprise you with his latest creation!

Community at Our Core

Beyond serving great coffee and treats, PNW Cookie Co. is passionate about fostering community connections. From handing out free cookies during the local Santa Parade to partnering with local school districts to reward and motivate their "Student of the Month," we're committed to being more than just your coffee stop, we want to be a community partner.
